Per le melanzane a filetti sott’olio selezioniamo i frutti più consistenti della varietà “Violetta lunga”, quella più indicata grazie alla sua caratteristica forma allungata.
I prodotti vengono tagliati a strisce e lavorati con tecniche antiche che, utilizzando il sale da cucina, eliminano i liquidi in eccesso.
Infine vengono condite con aceto di vino, origano, aglio, sale e peperoncino e riposte in vasetti di vetro con l’olio.
